Madagascar Bourbon vanilla is the extract that's most commonly found in supermarkets and it has a sweet, mellow taste. It's the one used in the recipe but you can use any kind of vanilla extract from Mexican vanilla (sweet taste with a little spice) to Tahitian (fruity and floral taste).

Vanilla bean, vanilla paste, or vanilla powder can be used in place of vanilla extract but extract is the easiest to use. The recipe uses 1 tablespoon of vanilla extract so instead of the extract, use 1 tablespoon of vanilla paste or powder. To use vanilla bean, use 1 whole vanilla bean.
